The Experts’ tips to keeping your biltong fresh and in tip-top shape

Sliced Biltong

Always store your bags of sliced biltong in the fridge. Normally a cool and dry place would suffice, but we are in Malta and humidity is a problem here, so the fridge is the safest. Keep your biltong bag unopened until you are ready to eat it (this should not take you too long 😀). Once the bag is opened, keep storing in the fridge and close it with a paper clip/clothes pin. Do not put it in a plastic container, biltong needs to breathe. We recommend once opened, to consume your biltong within 7 days.

Biltong whole pieces

If you plan to consume your whole piece on the same day or following 2 days you receive your order, then you can store it in the fridge in the brown paper bag provided. However, if you want to keep it for longer, the best and safest way to ensure freshness is to store it in the freezer. You can either put it in a ziplock bag or wrap in a brown paper bag (which we provide), remove it from the freezer and give it about 15-20 minutes to allow for it to come to room temperature before you eat it. If care is not taken with whole pieces they will spoil and go mouldy.

If you have requested for us to vacuum pack whole pieces for you, it is not recommended to keep your biltong in the plastic bag. Once received, remove from the plastic packet, allowing the biltong to ‘breathe’ for an hour or so and then eat the biltong within a few days whilst following the guidance above. To enjoy the best flavour and taste, we recommend consuming whole pieces within 2 weeks. Whole pieces cannot be replaced if they spoil.

Droëwors

Droewors can be kept in the brown paper bag they are packaged in and stored in the fridge at all times until you have consumed them. They can also be stored in the freezer following the same guidelines as with whole pieces of biltong. For best flavour and taste, we recommend consuming your droewors within 2 weeks

Chilli bites

Chilli bites are quite dry to begin with due to the extensive drying process used in their preparation and therefore mould is normally not something which will be a problem. We recommend storing in the fridge at all times in the packaging provided . If you have bought in bulk then you can store them in the freezer and take out when you want to eat them, as they only need about 5-10 min to come to room temperature.

If upon receipt of your order, you find that any of your packaged biltong (sliced/whole pieces), chilli bites or droewors has mould, please let us know. We recommend sending photos of the packaged product (front and back) and contact us on email at biltongboyz.mt@gmail.com
